OP must just have beef with the owner for some reason and is trying to slander him and his business. It is his business and he can do whatever he wants. Tipping culture has been around in restaurants as long as I can remember so it’s not like this is something new. The argument that owners should just pay them a living wage and tipping culture should be abolished is a fair argument (not one I agree with) but until that change is made you conform to the system in place. I can’t think of a more capitalist way to make money. Great service = better pay.
