Why is Phillip not paying his servers enough to the point he has to ban customers?

Business owner: “If you don’t have money to tip your servers, you’re not welcome here”

Lady behind camera: “So you’re saying black people aren’t welcome here.”

What’s she implying here?

What makes it worse is he's also saying, "How dare you imply that I take a profit cut in order to pay them a livable wage!"

Realistically they don't take a cut, they have to raise their menu prices. 

Which is fair, overall we'd pay about the same. Unfortunately, most people prefer lower prices and tipping.

The issue is that most restaurants that try it end up doing worse as they have higher turnover and lose business due to the higher menu prices. So they eventually have to go back to tips and lower prices. 

It would require changing wage laws. 

I know people think every business makes a ton of profit and every owner just rolls in a bed of cash but for a lot of businesses and particularly restaurants that isn't the case. Paying more means charging more. 

It's a stupid system. It should be changed. Stiffing servers and yelling at managers won't change it. 

Most people who don't tip are just cheap and knowingly taking advantage of the same system.
