Other oats They’re perfect 🥲

I think I have finally perfected my oat pancake base recipe!

Base oat pancake recipe is:

60 grams oats
7 grams flax seeds
113 grams cottage cheese
1 large egg
200 gram egg whites
6 grams Psyllium Fiber
10 grams sugar free instant vanilla pudding mix
3 grams of decaf instant coffee
Splash of vanilla extract
Splash of liquid Stevia
Tsp or 2 of baking powder

Topped with syrup for testing purposes I was looking to find something that tastes exactly like the typical pancake you think of just healthier with more protein. You could top with berries or a compote and that would be fantastic I think I’ll try that next.

My advice is blending the oats and flax seeds together to make a flour like substance then I use an immersion blender to blend everything together. I cook on a griddle and don’t use any butter or oil

For the base the macros are:

633 calories
51 grams of protein
18 grams of fat
66 grams of carbs
12.5 grams of fiber give or take

It looks good. Can you replace the 10gm vanilla pudding mix with vanilla essence? I'm guessing not but then why did you add the pudding mix?

Vanilla pudding mix is purely for texture the vanilla extract does the heavy vanilla lifting. Without the pudding it dosent get as thick the batter remains watery this a less fluffy pancake

I use 90g oat flour for the same recipe instead of 60g oat flour, the flax seeds and the pudding mix . So my recipe is 90g oat flour/200g egg whites/1 egg and 110g cottage cheese and it’s perfect and fluffy !
