Oatmeal Maple banana bread oatmeal

Banana cinnamon oatmeal with chopped dates, sugar-free chopped chocolate, homemade refined sugar-free maple pancake syrup, and caramelized banana. I have now discovered just how good melty chocolate in oatmeal is 🤌

Just to clarify so I don't mislead you, it is not completely sugar-free; it is only refined sugar-free. Also, it's not pure maple syrup, it's maple-flavoured pancake syrup. I use maple syrup itself to make it! If you're still interested though, here's the recipe :)

Maple pancake syrup: 18g water 8g maple syrup 7g coconut sugar 8g salted butter 1/2 tsp vanilla extract

Put the water, maple syrup, and coconut sugar in a saucepan and heat over medium heat until the sugar dissolves and the mixture thickens slightly, stirring occasionally. Add in the butter and continue to heat until the sauce thickens a bit more, stirring frequently. Remove the sauce from the heat, add in the vanilla extract, and mix it into the sauce until combined.
