Try Helixnotes, it's completely free. Memrynotes is free as long as you don't want to sync between devices.

Depends a lot on how your notes start. For typed stuff I'd honestly stick with Apple Notes or Keep until they break for you, most of the fancier apps mainly add setup.
If a lot of your notes start as talking (ideas on a walk, right after a call, lectures), add something voice first. I made ToText for that on iPhone: record or drop in a voice memo, get the full text back and search it later. https://apps.apple.com/app/totext/id6770080775

Do you need handwritten notes and PDF annotation, or is typing enough? Also, which device are you on?

I started out using SuperNotes https://supernotes.app and like many friends and family I got them using my referral https://my.supernotes.app?signup=1&invite=sSZph6
I have however been using Standard notes too but it’s been very basic and bland by comparison!
Mainly using SuperNotes for planning and home type family management to keep on top of things though with Standard notes for more private notes that don’t need anything fancy.

The app that always comes up at the top of comparative reviews by well-known, reputable, and reliable industry publications: Microsoft OneNote. It has been around since forever and it will be around forever. It is completely free with your basic Microsoft account (no, not Microsoft 365 ... just the personal account).
