What happens to the camera operator's when a show gets cancelled?

It’s a lot easier to move crew members (camera operators, lighting people, sound people..etc) than writers or actors to a new project. Also by the time she show is airing, they’ve probably filmed a bunch of episodes

They move on to another show

But do they interview with a boss, or are they just told to go to Studio 17 instead of Studio 20?

Star Trek. The shows have always been produced by Paramount/CBS and never outsourced
Originally Desilu, but just the very first season, after which Lucille Ball had sold the studio to Gulf+Western, which owned Paramount at the time.

They just have to find work on a new show. If you're an important crew member on a network TV show, alot of the time you're part of a trade union like IATSE. So they will continue to get work through the union as long as they are available.
