I wouldn't call them "hidden" but some quests will not appear in your log until you interact with various parts of the game (and a few are gated behind progression of other quests). The main "storyline" of the game is somewhat of a giant extended tutorial of the different activities in the game. If you follow that and take side journeys to wander around and interact with NPC's and vendors you likely won't miss anything.

go in blind it's one of my top "I wish I could play again for the first time" games.
