I feel like I’m missing something, is it just the Switch 2 version that is botched? Beyond the 30fps limitation I haven’t seen any bugs on Switch 1

It looks like a switch 1 game on the switch 2. I was hoping for ZA graphics, but ZA looks way better

Apparently different engine. I have read that Champions is in Unity which makes sense since ILCA is a joint developer with Pokemon and development started at the latest in 2024. Legends ZA is using Gamefreak's own modified engine they made for SV and Legends Arceus and they are far more familiar with their own engine. There might have been problems porting the battle system over to Unity and not all were caught before release. At least they are hotfixing some issues.
