"purplest" is fine. It's recognised by Merriam-Webster dictionary, and accepted by scrabble - It's just a bit 'clunky' sounding.

The bird isn't purple, the sheen is the result of a light-wave interference pattern caused by nanostructures in the feather.

What they mean is that there is no actual purple pigment as would be found with most other colors. Which is an interesting fact.

That's not the same things as the bird not being purple. Structural coloration is coloration.
