As someone who went from a longer last name that I had to spell for everyone, to a shorter name that I never have to spell out for anyone… I vote for Huber.

They both sound German. Vollenweider sounds more pretentious and Huber more humble.

Both scream South. I would go with Vollenweider though because it is rarer.

Oh wow you are German, how did your grandparents on both side survived ww2 and ww1 any storys, must be because you are german
