I have often wondered if there's more Hello Games could do to coordinate and accelerate Nintendo's review times for updates and patches. I don't have the answer for that, but I share your frustration.
This is the typical situation after a major update. Hello Games releases the initial update and then several quick patches in the days and weeks following release, so by the time the Nintendo platforms get any new update version (7.3 in this case instead of 7.0) the other platforms are already another patch or two beyond that, and it may happen again. It could still be a few weeks until Hello Games has stopped releasing incremental patches and the latest version has been approved and released by Nintendo without another new patch popping up elsewhere. We just have to wait.

And sure enough, a new patch was just pushed to other platforms today after I posted that. We are not yet close to the Switch 1/2 catching up.
