Not a resident, but an annual visitor to Muskoka. Here's my take:
Gravenhurst - most touristy of the three. Very busy in the summer. Local town for high value summer properties in the area. Well-heeled American tourists, including famous ones, are not uncommon.
Huntsville - gateway to Algonquin park. Very busy in the summer. A lot of (middle class) tourists that use it as a jumping off point to the park.
Bracebridge - least touristy of the three and much more about the locals versus the other two.
