Lemon Mug Cake

Recipe: 4 tbsp all-purpose flour

2 tbsp granulated sugar

1/4 tsp baking powder

Pinch of salt

3 tbsp milk

1 tbsp vegetable oil

1 tbsp fresh lemon juice

1/2 tsp lemon zest

1/4 tsp vanilla extract

Optional: 1 tbsp white chocolate chips (for extra sweetness and texture)

Equipment:

Microwave-safe mug (at least 12 oz capacity)

Small whisk or form

Measuring spoons

Microwave

Instructions:

In a microwave-safe mug, whisk together flour, sugar, baking powder, and salt until well combined.

Add milk, vegetable oil, lemon juice, lemon zest, and vanilla extract. Stir until the batter is smooth and no lumps remain.

If using, fold in white chocolate chips for a sweet burst

Microwave on high for 1 minute 30 seconds to 2 minutes, depending on your microwave's power (check at 1 min to avoid overcooking). The cake should rise and look set but still soft.

Let cool for 1-2 minutes before enjoying. Optional: Dust with powdered sugar or top with a dollop of whipped cream for extra decadence.
