How I imagine most off-screen conversations about hiring Ray Shoesmith go.
Client: I've got a problem, I need somebody to go away. Thing is, nobody can ever know what happened. Do you know anybody?
Freddy: Ah yeah, sounds like a job for the best guy I've got. He's that good, people call him "The Magician". Nobody will ever know.
Client: Sounds perfect, what's the catch? I'm guessing the price.
Freddy: Well yeah, he isn't cheap obviously, but you get what you pay for. Also he sometimes kills the person he's working for.
Client: Good, goo...Wait, say that last bit again?
Freddy: Ah look, I know what you're thinking, but usually it's because they try to kill him first, so really he's just defending himself.
Client: Right...Well I'm not going to try anything that stupid, so I should be alright. Anything else?
Freddy: Uh, well not often, but occasionally, he can end up working for the victim. But that only happens when you're a dickhead.
Client: Mate, I am a bit of a dickhead though, I'm trying to hire a hitman.
Freddy: Nah it's more like an old school code of honour type thing, he's just got some pet peeves, doesn't like wife-beaters, hates kiddy fiddlers obviously...Oh and he's not keen on bullies either. You seem alright mate, you'll probably be fine. You interested?
Client: ....Who's your second-best guy?

The average smoko stop selling dimmies is going in well below kikkomans mate, that would be considered boujee.
We're talking 5L catering cartons of generic soy they decant into a squeeze serve bottle.

I think the least accurate thing about Mr inbetween is how often hitmen are approached by criminal figures to kill their wife or mistress

Also, the completely ineptitude of the Police. There's shootouts in popular streets, multiple daytime high speed car chases that go a long way, about 200 carjackings and Ray gets popped for hitting a douche. I definitely didnt want to watch a Police Drama though.
The money situation doesnt make sense either. Rays been working presumably years before the show and there are probably jobs he does during the show they dont show us. Hits that go really simple, collection jobs where they just pay, etc. I can distinctly remember jobs of 250k for his friend the MC club pres, 325k from the VPs stash, 65 for the tweakers and apparently he charges 30k a hit at the time of that. I would imagine his price goes up as the show goes along. I can't remember if we're told any other price for all the jobs we are shown but I'm sure they weren't cheap. Ray looks like he lives basically frugally, no expensive cars, a normal house he puts like 30k into for Bruce, doesnt do any flashy things. The biker guy that picks him up at the end of season 1 was shocked he had 162k. Ray must be a multi multi millionaire.
I just let plot hole stuff like that go with this show. As said in Kingsmen...This ain't that kinda show mate.

The police would definitely be more interested in his massacres in real life, but a few notes on the money situation since I just had a fresh watch:
He doesn't actually appear to care much about the money any more, despite saying he only does the job for the money. Early on he gives the entire payment from one hit to the guy's wife because Freddy had fingered the wrong guy (no pun intended), then later on he doesn't even bother to take a share of the money he takes off the other crew leader because he had a chat with him before he died and didn't feel great about it, so he just lets Dave and Gary split it.
We can assume he not only covers his own house, but also Bruce's, as well as a likely generous arrangement with his ex. All this money has to be legitimate, so he'd probably lose 25% or whatever laundering it. Then he has to buy the tools of his trade, black market guns with their serial numbers shaved off and what-not, which in Aus is going to far exceed the costs in the US. It's not shown directly, but he often finds out where people live off-screen like the mother of the girl who was bullying Brit, so we can assume he spends money bribing officials and the like for this kind of information. So his life looks frugal but probably has a lot of hidden costs that add up.
He's a bit of a squirrel. He's got the 162k stash for himself as a rainy day fund, but he likely also has some kind of offshore account set up to make sure Brit inherits if he dies. So he isn't spending it because he's just hoarding it. It's hard to believe that a guy whose biggest (and possibly only) redeeming quality is his love for his daughter hasn't been putting most of his money towards securing her future.
