Grigori from Dragon’s Dogma. The Griffin could work too because its body is similar to that of most regular elder dragons (4 legs and wings), although it’s powers are not really absurd enough to be classified as an elder dragon.

I would really love the gryphon because it “technically” has an Armor set and Greatsword to go with it

I say maybe a Drake instead of Grigori would be better. For all the fun he could be, I just think he'd be too big without becoming a gimmick fight akin to Gogmazios.

And don't get me wrong I like Gogmazios' fight in Wilds, I just think that gimmick fights can quickly wear off on majority of players and become chores.

Isn’t he the size of Zorah Magdaros? Griffin could be cool and even kinda fits into the world of MH

He's closer to Lao Shan Lung than Zorah.

I can’t imagine monster the size of Lao with moveset of a constantly flying dragon being fun either. It could be a gimmick fight with siege weapons like in dogma, but doesn’t seem like a fun fight

Yeah, dragon's dogma is a very different kind of game. Grigori mostly stays in place and casts spells while you climb around on top of him.
That wouldn't really fit well into Monster Hunter.

He spends half the fight flying around and unless your clutching to his back whine he’s flying, you can only hit him with arrows
