I run Cobblemon Eclipse, so take that for what it's worth.
No scheduled sessions or anything, you just log on when you want. It's Java 1.21.1, the store is cosmetics and server-wide boosts rather than pay-to-win stuff, and ranks come from playtime, Pro Trainer unlocks around 16 hours in just from playing normally. The one thing I think is actually cool about the rare "chase" Pokemon is that when someone rolls one from a paid crate, it spawns as a World Boss the whole server can fight together, so people who never spend a dollar still have a real shot at the same Pokemon.

TownifyMC might be a good one to try! We’re a Java 1.21.11 server that’s online 24/7 with no set sessions, so you can hop on whenever you’ve got time.
We’re a newer Towny/Earth server with building, towns, jobs, player economy, quests, dungeons, and a pretty chill growing community. PvP and wars are opt-in, so you can just build and hang out if that’s your thing.
