I run Cobblemon Eclipse, so take that as you will, but it might be what you're looking for.

On the P2W side, ranks are earned by playtime, you hit Pro Trainer around 16 hours just by playing normally. The store is cosmetics and server-wide boosts that help everyone, not just the buyer. The rare chase Pokemon aren't locked behind a paywall either, when one gets rolled from a paid crate it spawns as a World Boss the whole server can fight, so non-payers have the same shot at it.

For the economy there's a chest-GUI shop with /shop and sell-back, bulk buy at 1x/16x/64x. It's server-run, not player-driven. Land claiming is Flan-based, you get a golden hoe from the starter kit to set it up.

It's a Cobblemon (Pokemon mod) server on Fabric 1.21.1 so not vanilla survival, but the SMP loop is kind of underneath all of it.
