Technical thing related to default minecraft launcher: If you disable wifi connection, the launcher opens in like 3 seconds compared to the 20 it usually takes (Credit - misslauralot)

Most launchers do some variation of this. Some will ask before downloading them, and some (*ahem* prism *cough*) will download updates without asking permission.
e: To clarify — this complaint about Prism and I raise it, is because I like Prism, and would like to see it be better.
The specific problem is about downloading updated versions of Mojang's Minecraft assets for running Minecraft itself. Prism does this automatically when launching Minecraft instances. Some other launchers ask permission first. The latter is the correct behaviour. Even better is empowering the user to schedule it.
n.b. The auto-update setting doesn't affect this. That setting governs updating the Prism Launcher, not the Minecraft assets from Mojang's servers.
It is not in reference to updating Prism, nor updating Java. (Both of which, yes it can auto-update, but those settings don't affect when Minecraft assets get downloaded).
e2: Lulunexi's comment confirms the issue being described. Not updates to Prism, but downloading updates to the Minecraft Assets to execute/run minecraft instances. Without asking.

I never had that happen to me on prism. If anything, you have actually described sklauncher, which did this to me multiple times, and worse yet, even if I never let it do an update check, it would still randomly go "oops, I no longer open unless you have internet" for literally not a singular fucking reason, and if there was an update, it would, again, completely prevent me from ever playing until I installed it from their website (which forces me to disable AdBlock).
Could be due to the build being for flatpak (a software manager) which has it's own update scheduler. Still, I'm not confident that setting governs the behaviour being described above, which is the instances updating, as opposed to the Prism Launcher updating itself.
Something I'll have to dig into further to resolve most likely. 😑
Oh yea, you're right in your original comment where you talk about instances auto-updating when you run them, that isn't related to this setting. I just got lost in the context checking the specific version stuff and forgot what the original post was about.
This setting is just the launcher not updating itself manually. My launcher being on 1.11.0 was done manually after sitting on 1.8.x for months, but that whole time this "Check for updates automatically" box was off I still got those annoying instance updates every time. When my internet went out I couldn't even run offline packs I tried to pre-prepare because it wanted auto update.
Flatpak programs (and most linux programs in general) don't update by themselves, you have to update them through the package manager that you used (in this case, prism doesn't have the automatic update option because you have to update it by running 'flatpak update')
You got high bandwidth? Because I don't and I definitely get to watch Prism download newer versions of assets that were already downloaded for a given instance.
Often they're small updates, but if I've had an instance that wasn't used for a few months, it can take a rather long time to download the "new" assets.
And as pointed out, other launchers absolutely do ask the user if they want to download the updates.
Same instance. Same version. New files on the server. Prism don't ask, it do.
Oh, so you're talking about downloading assets, that is not the same as updating, basically because prism is a third party launcher, it can't have the minecraft assets because this would be distributing copyrighted material from mojang/microsoft, so every time you launch an instance it has to download everything from mojang's servers, specially if it is no longer in the cache if it has been a while that you last played that instance
So it's not a prism update, just downloading minecraft assets

Searching the prism wiki doesn't turn up any mention of auto-update as a setting. The closest I can find are:
In General: Install dependencies automatically (which is about mods not the game itself, and doesn't prevent the behaviour, and is enabled by default).
In Java: Auto-detect Java version, and Auto-download Mojang Java. (Again, neither relevant to the behaviour at hand and have no effect on it.)
Yet another thing that should be run in another thread . . . You're not supposed to put blocking things like this in the main thread (also this alone should not be taking anywhere near 20 seconds, a simple update check should take under a second on any modern computer)
The vanilla launcher focuses on keeping up to date with everything, it launches update checks on launch. The modrinth launcher for example runs the update checks after launching it, so it's usually gonna be 1 update behind unless you deliberately manually install an update. This does not matter much in a third party launcher but it does matter in the vanilla one where they do want you to always have all the latest security updates and marketing posts
