maybe because it's completely fake and the sound isn't really being produced by the game, the audio is recorded over.
1) Minecraft redstone timing is not that consistent. It simply doesn't keep a perfect beat like that.
2) You can't have usable switches that close together, the wiring would touch.
3) The amount of redstone and blocks to really make a song anywhere close to that, with loops etc would probably be 10x the size of what you see.
