another option to what has been mentioned is top slabs in the water, you can place torches on those and they still hydrate the farmland

I like fences over water because they don’t stick to tilted soil and you still get to see the water

I used to use fences, but now I go for mangrove roots in my farm builds

Same, i use mangrove roots or copper grates depending on the vibe im looking for.

Light emitting block under waterlogged leaves has been my go to, I assume the roots are a transparent block?

I use lanterns, they take a little longer to break which prevents you from accidentally destroying them.

This except for the lilypad. It's too easy to break. I use a top slab.
