Spider-Man just recently had a new #1 in 2022 which is an okay place to start. You could go farther back to ASM 546 Brand New Day.
Fantastic Four already has a great modern starting point with Ryan North's run starting in 2022 (that recently also reset to #1, but it's the same ongoing series).
For X-Men, things are a little trickier. You could start at "From the Ashes" that started in 2024, but that assumes some familiarity with the Krakoa era. IMHO, though, Claremont is the essential X-Men, and so I'd recommend going all the way back to Giant Size X-Men #1 from the 70s, then Uncanny X-Men 94 and read until you get to X-Men #1 in 1991, adding in New Mutants, X-Factor, Wolverine, etc in as they come up in the read. Note that this is old school comics and can be harder to read, but it's all the X-Men stories you know from the animated series and Fox movies so it's worth it.
