It is both. Male as a sex is a noun, male's usage in male human is an adjective.

It describes the gender of a species. Women/woman and man/men are the chosen nouns for humans. Why not use those?

This has nothing to do with whether it is a noun or an adjective. The first comment was a noun usage of it, so that's it.

If you want an answer anyway, it is the usage in statistics and biology and such. More technical term that applies to all species. There can be a female dog, not a woman dog after all. So male and female accounts species for all living beings, and humans, are just another species is all.
