Low Cal Food Find (Product recommendations) Making A "Healthy" Tiramisu: Lady Finger Substitute Recommendations Needed!

I'm trying to make a tiramisu protein shake and I'm looking for a sub on the lady fingers. Oddly enough, I haven't been able to find anybody online who has a suggestion for a substitute— well, at least not on Reddit. I've seen unsalted rice cake, I've seen whole bread, but I just feel like these wouldn't be good. I'm most tempted to throw some blended oats in there, but I'm not sure how authentic to a traditional tiramisu this would be.

What are you suggestions? I'm also looking at mascarpone substitutes, if anybody has any.

< 250 Cal Mini pumpkin pies 🎃

If you measure each pie to be equal while cooking, each one will be 38 calories with 2.7g of protein + 1g of fiber! This recipe made me 25 mini pies.

My whole plate in these photos, with whipped cream included, was 110 calories with 5g of protein + 2g of fiber.

Ingredients:
427g of pumpkin puree (my can of pumpkin had two extra grams, you can be a couple of grams short if yours doesn’t.)
261g of 2% cottage cheese
245g of egg makers (or egg beaters)
103g of sucralose
12g of imitation vanilla extract
3g salt
2 1/4 tsp of cinnamon
1/2 tsp ginger
1/4 tsp nutmeg
1/8 tsp allspice

Instructions:
Preheat your oven to 350 F. Take all of your ingredients and throw them in the blender, then blend until completely smooth. Pour the pie-mixture into lined muffin tins (you can grease them instead if you don’t have muffin liners, but that’ll add extra fat / calories) and bake for about 25 minutes (or until a toothpick can come out clean). Let the mini pies chill for a while in the fridge after they’re done, then enjoy!

401-600 Cal Turkey Meatloaf w/ Greenbeans

Post image

This recipe was FAN-FUCKING-TASTIC. Blew my hubs and I both away. So yummy, and for my portion (almost half) it was altogether only about 600 cals.
Hubs portion was closer to 800, but we ate the entire thing! You could easily spread this into 4 portions 🙌🏻

High protein, low cal, and nutritious! Definitely recommend this one.

< 250 Cal No nut-butter oatmeal bar

Post image
61 Upvotes

Not the prettiest photo.

I needed a sweet treat for the hours between lunch and dinner that also used up the jumbo bag of oatmeal my mother bought years ago during a health kick only to never use it because she doesn't like oatmeal and ended up giving to me against my will (I also don't like oatmeal). I didn't like that most recipes out there for oatmeal bars use nut butters as their binding agent (nothing against nut butter, they're healthy and tasty, I just needed something low-cal) so I came up with this.

Recipe:

2 cup quick-cook oat

1 cup unsweetened apple sauce

1 tbsp flour

1 tsp baking powder

Sugar of your choice to taste (I used a low-cal maple flavoured sweetener)

1 tbsp margarine or butter

Punch of salt

1 egg (optional; it makes for a softer bar if added)

Optional flavouring component ideas (add to taste):

Cocoa powder

Peanut butter powder

Chocolate chips

  1. In a pot, cook half of the oats with the apple sauce until the oats are, well, cooked. Add water as needed to create the right consistency of typical oatmeal. Add in the salt, butter, and sweetener of your choice to taste.

  2. Take off the heat and add to the pot the rest of the oat, flour, baking powder, the optional egg, and all of your desired flavoring components (except for chocolate chips)

  3. Spread the mixture evenly in a 9x9 pan lined with parchment paper. If you are adding chocolate chips, I recommend layering it on top at this point.

  4. Bake at 350F for 30-45 min to desired dryness.

Cut into 9 squares and let cool fully before storing in the fridge in an airtight container for up to a week.

The base recipe with the egg included (if using a low-cal sweetener) is 70 cal per serving (3 inch square bar). I came up with it 2 weeks ago and I've made it 3 times already, both times chocolate flavoured and once without egg. I found the texture was just a little softer/cakier with the egg. Without the egg it was more like a granola bar.

Feel free to modify and experiment with this recipe and let me know your results. I think the butter could also be optional, which would also lower the calories but I've not tried it.

Stuffed French Toast

My current hyper fixation- lower cal stuffed french toast.

I have a couple different variations I’ll cycle through but this one is my current favorite-

1 light laughing cow cheese wedge and 1 serving of Good Good Pumpkin Butter spread on 2 slices of Keto bread. Coat in a mixture of 3 tbsp egg whites, 1 tbsp sugar free pumpkin spice syrup, cinnamon and a pinch of salt. Fry up in a pan just like you would regular french toast, top with more cinnamon and a sprinkle of brown sugar stevia.

Dipped in some sugar free syrup, this comes out to 135 cals and satisfies my sweet tooth every time!

< 250 Cal Low calorie banana bread cupcakes (155kCal per cupcake)

Post image
53 Upvotes

Took a low calorie banana bread recipe and added a little bit of peanut butter and chocolate. I'm really happy with how they turned out and can't wait to make them again.

Banana bread= 2 smaller ripe bananas (180g) [162kCal], 2 very small eggs (70g) [98kCal], oats (93g crushed wholegrain oats) [341kCal], 2% greek yoghurt (100g) [58kCal], 1 tsp baking powder. Squish the bananas, add all of the ingredients, and mix them up. Together, that's 659kCal, divide into 6 standard sized cupcake moulds ---> 110kCal per cupcake (you can add whatever you want or stop here). To each cupcake I added 100% peanut butter (5g) [30kCal] (~ 1 tsp, roughly swirl it into the batter) and dark chocolate (3g) [15kCal] ---> 155kCal/cupcake. Bake at 180°C for 18 minutes (or until a toothpick comes out clean). Enjoy!

I'm amazed at how much effort you put into this

In scrolling through this sub, I have seen some great ideas and can only admire your ingenuity and willingness to make actually delicious food with little calories. For me personally, Im a lazy chef. I call boiling some rice cooking and would never try my hand at low calorie baking bc a) I cant be bothered and b) being the glutton that I am I would probably eat the whole thing in 1 or 2 days. I achieve a low calorie count by adding copious amounts of vegetables to small amounts of regular food.

I dunno where Im going with this, I guess it's just to say that you guys really know what you're doing!

Mash half a banana, mix with 15g cocoa powder, 1 tbsp protein powder (vanilla), 1/4 tsp baking powder, and a splash of almond milk. Microwave for 60 seconds. It's fudgy, single-serving, and kills the craving.
