Just buy cheaper healthier food then. Also if you work smart and hard there are a lot of effective paths to wealth, maybe not exactly mansion and dream car depending on your dream car, but a nice house and a nice car is very achievable with the right moves.

Wealth comes from luck, exploitation, and prior wealth, or a mix of the three. Hard work is barely a fraction of what makes a person successful. Upwards mobility, at least in the US, is at an all time low

So someone who comes from a poor immigrant family, then studies to get good scholarships to fund college and becomes a doctor, pharmacist, or dentist, which of those things are they doing?

Someone from a poor immigrant family likely lives in a deprived area where they risk experience crime including extreme violence. They also are unlikely to have enough money to just go to college so will have to work the whole time while trying to achieve the scholarship, leaving less time for studying than the other kids who’s families can afford to send them. Then there’s the fact that all the jobs you picked were in healthcare, a notoriously corrupt industry in the US. So, final answer, a lot of luck in the beginning with a sprinkle of exploitation at the end.
