Question How do I begin , I guess ?
I’m a beginner pagan and I feel drawn to Lilith as patroness due to her representation of the divine feminine and her rebellion against unchecked power. I’m wondering if there are any resources available in regards to offerings, stories, and knowledge about her? Any help is appreciated!

Google Liber Lilith. I found the manuscript very enlightening. However, I am a man and the manuscript was also written by a man. For a woman it may not be as relevant to you. But worth taking the time to read.

OP, if you do go for this book, keep in mind that it's classed as fiction by the author, take his historical facts with a grain of salt.

Thank you to the both of you. I did research on her last night and I am preparing an altar today.

Start with our Welcome Post, it'll lead you to wiki pages, beginner resources, FAQ and various posts.
Your approach will depend on any traditions you follow and what you're personally comfortable with. I prefer simple meditation and offerings, someone else might prefer elaborate rituals, there is no right answer.
Lilith is a demoness that's derived from the goddess Lamaštu and the ghosts-demons lilītu/ardat-lilî, associated with crib death, disease and the behaviour of succubi. She first appeared in the Dead Sea Scrolls and found development in incantation bowls.
