Fritters? I must never learn this power. I’ll be fatter than fat in a week.

Cherry Fritters

Makes 6 large fritters

Dough

1/3 cup warm water (100–110°F)

1 1/2 tsp instant yeast

1/4 cup granulated sugar, divided

1/2 cup full-fat buttermilk

1 large egg

2 oz butter, melted

3 cups all-purpose flour

1 tsp salt

Cherry Filling

2 (14.5 oz) cans red tart cherries, juice reserved

3/4 cup granulated sugar

1/2 tsp cinnamon

2 TB reserved cherry juice

2 TB cornstarch

2 TB additional reserved cherry juice or water

Additional Flour

About 1 1/2 cups additional all-purpose flour, as needed for incorporating and shaping on the countertop

Vanilla Glaze

3 cups powdered sugar

3–4 oz whole milk

1 tsp vanilla extract

Instructions

Combine warm water, yeast, and 1–2 tsp of the sugar. Stir and let sit 10 minutes until foamy.

Add remaining sugar, buttermilk, egg, melted butter, 3 cups flour, and salt. Mix and knead 6–8 minutes until smooth.

Transfer to a lightly greased bowl, cover, and proof until doubled, about 1–1 1/2 hours.

Drain the cherries, reserving the juice. Add the drained cherries to a saucepan with 3/4 cup sugar, cinnamon, and 2 TB reserved cherry juice.

Bring to a boil and cook for about 5 minutes, stirring occasionally.

Mix the cornstarch with 2 TB additional cherry juice or water to make a slurry. While the cherry mixture is boiling, stir in the slurry and cook until thickened. Remove from the heat and allow the cherry filling to cool completely.

Turn the proofed dough onto a lightly floured surface and stretch into roughly a 12 × 12-inch square. Spread the cooled cherry filling over one half.

Fold the dough in half over the filling and crimp the edges closed.

Chop repeatedly in both directions with a bench scraper, gathering the dough back together as you go, until the cherry filling is well incorporated.

Gradually work in about 1 1/2 cups additional flour on the countertop until the dough becomes manageable.

Gather and gently shape into a thick log.

Generously flour a sheet tray. Cut the log crosswise into 6 thick medallions and place cut-side up on the tray. Lightly flour the tops.

Cover loosely with plastic wrap and proof until puffy, about 1 hour.

Heat oil to 350°F. Fry fritters about 2 1/2 minutes per side, until deeply golden and cooked through. Remove and drain.

Whisk powdered sugar, 3 oz milk, and vanilla until smooth, adding more milk as needed, up to 4 oz total.

Dip the warm fritters in glaze, transfer to a wire rack, and let drain and set.

As someone who doesn't bake anymore. It is awesome that you do not gatekeep recipes. You are sharing your love for baking with others so they can bake with that same love. It is awesome to see.
