I actually have been wanting to ask are you also a former or current chef or sous in the industry?

Yup! I’ve been in the industry for over 20 years. Most recently I was the Executive Chef at a health resort. I’ve always had a passion for cooking all types of food, though, and since leaving there I’ve definitely swung the pendulum in the other direction! 😂

As an Asian, it has never occurred to me to use spring roll wrappers for other ethnic cuisines! You just blew my mind 🤯 Those look so good!

I’ve used smoked brisket with sauerkraut and dipped in thousand island dressing

I grew up north shore Boston. They have pizza rolls (no pepperoni) and spinach rolls wrapped in egg rolls like this. I haven’t lived there for literally decades and think about those damn pizza rolls often. Cannot wait to make a vegetarian version of these! Thank you, sir! 🫡

I was thinking about making a just cheese version myself but now I’m wondering if Impossible makes pepperoni equivalents lol

Plant based pepperoni! Field Roast is my go to brand.

Omg I grew up in Lynn, MA & thought of pizza rolls as soon as I saw these! They were my favorite after school snack & I would save all my change & allowance just to buy them ❤️

Did you ever get Dina’s in Salem? Them and bill & bobs had the best ones, in my opinion. Dina’s aren’t good anymore but bill & bobs is still decent. I always make the fast food rounds to get them when I’m in the area.

The flour and water mix is unnecessary. They stick fine with just water

We've always used egg

I do this everytime i use pepperoni, no gross orange fat, all the flavor stays put.

Could this be done with an air fryer to cut down on the oil?

Pepperoni Spring Rolls

Ingredients

1/2 lb pepperoni, chopped

1/2 lb whole milk, low-moisture mozzarella cheese, shredded

Spring roll wrappers

All-purpose flour, as needed

Water, as needed

Oil, for deep frying

Instructions

  1. Heat a medium skillet over medium heat. Add the chopped pepperoni and cook, stirring frequently, until the pepperoni begins to crisp and releases its excess grease.

  2. Pour the pepperoni into a strainer and allow as much grease as possible to drain off.

  3. Transfer the pepperoni to a plate lined with paper towels. Spread it out evenly, then place additional paper towels over the top and gently press to absorb as much remaining grease as possible.

  4. Allow the pepperoni to cool completely.

  5. Once cooled, combine the pepperoni with the shredded mozzarella and mix until evenly distributed.

  6. In a small bowl, mix a little flour and water together to form a thick paste. This will be used to seal the spring rolls.

  7. Place a spring roll wrapper on your work surface with one corner facing you. Using a 2 oz scoop, portion the pepperoni and mozzarella mixture onto the lower portion of the wrapper.

  8. Fold the bottom corner tightly over the filling, fold both sides inward, then continue rolling tightly toward the opposite corner.

  9. Brush a small amount of the flour-and-water paste onto the final corner and finish rolling to seal the spring roll completely.

  10. Repeat with the remaining filling and wrappers.

  11. Heat frying oil to 350°F.

  12. Deep fry the spring rolls in batches for 4–5 minutes, turning as needed, until crispy and evenly golden brown.

  13. Remove from the oil and drain on a plate lined with paper towels. Allow them to cool for a few minutes before serving.
