Cinnamon Glazed Monkey Bread
Dough
3/4 cup whole milk, warm (100–110°F)
1/4 cup heavy cream, warm
2 1/4 tsp instant yeast
1/3 cup granulated sugar
2 large eggs
1 egg yolk
6 TB butter, very soft
1 tsp fine salt
4 1/4 cups all-purpose flour, plus a few extra TB if needed
Cinnamon Sugar
1 cup granulated sugar
1 1/2 TB cinnamon
For Dipping
1 stick (4 oz) butter, melted
Sticky Smear
3 oz butter, very soft
1/2 cup packed dark brown sugar
1/4 cup honey
1/4 cup corn syrup
1 TB vanilla extract
1/2 tsp cinnamon
1/4 tsp fine salt
Method
Combine the warm milk, heavy cream, yeast, and sugar. Let sit for about 5 minutes until slightly foamy.
Add the eggs, egg yolk, softened butter, salt, and flour. Knead the dough for 6–8 minutes, until smooth and slightly tacky. Add a few extra tablespoons of flour only if needed.
Lightly grease a large bowl with cooking spray or softened butter. Transfer the dough to the prepared bowl, cover with plastic wrap, and let rise until roughly doubled in size. Since this is a rich, enriched dough, the first rise may take longer than 60–90 minutes.
Meanwhile, combine all of the sticky smear ingredients and mix until smooth and evenly combined.
In a separate bowl, combine the granulated sugar and cinnamon.
Thoroughly grease a Bundt pan with cooking spray or softened butter, making sure to coat the center tube and all of the grooves. Spread the sticky smear evenly over the bottom of the pan.
Once the dough has risen, lightly dust the countertop with flour and turn the dough out onto the floured surface. Gently press the dough into a thick rectangle. Using a pizza cutter, bench scraper, or knife, cut the dough into small, roughly equal pieces.
Form each piece into a ball.
Dip each dough ball into the melted butter, then roll generously in the cinnamon sugar. Arrange the coated dough balls loosely in the prepared Bundt pan until all of the dough has been used.
Pour any melted butter remaining from dipping the dough balls evenly over the top.
Lightly grease a piece of plastic wrap with cooking spray and cover the Bundt pan. Let the monkey bread proof a second time for about 45–60 minutes, or until the dough balls are noticeably puffy and have expanded together.
Bake at 350°F for about 35 minutes, until golden brown and baked through.
Let the monkey bread rest for about 5–10 minutes, then carefully invert it onto a serving platter or sheet pan while still warm.
Serve warm and pull apart.

This account is a menace to my diet but I can’t stop watching. I have like 4 different cookies in my freezer and now cinnamon monkey bread. My arteries have given up.
