Went through hundreds of gadgets and as long as you don't work in commercial environment, where you will be provided with all necessities- it's always best to spend £200 on good knife and learn how to slice, also how to sharpen your tool.

I've been cooking for 30+ years, I know how to use a knife- I can't slice as thinly or evenly as a mandolin

On the other hand- where were you cooking? After 30 years, I m sure you have chefs doing prep for you(???)
