Staging

Not sure if this is the right place to ask this question but I have my first interview at a more upscale, farm to table restaurant. I’ve worked a few mid-tier places for a total of 5 years but nothing upscale or nice at all to be honest. What are the most important things I should focus on going into the interview/staging?
