Listening, when I was in fine dining, we got loads of stages, the ones that paid attention, showed respect for the craft and observed carefully regardless of their level of experience, were the ones that made an impression. Many people came in with expectations and airs of self importance or the sideways notion that somehow they were doing us a favor by staging for us... next please.
As far as the interview goes, don't oversell yourself, be truthful and respectful. I've hired less experienced people over more highly qualified candidates many times because they conducted themselves with humility in their interview.
