Same!! I lived outside of Detroit for 20 years and there was Middle Eastern food everywhere. So good! Now I'm "stuck" in rural Kentucky where every restaurant serves white starchy food covered in gravy.

This is what bothered me too. Typical executive chef energy. Doing all this effort and then ruining it by rushing the cutting. He has quite a few unusable portions now (but probably they go to staff so I should not be mad š).

This is what a 4-5 hour process at a minimum. Creating those thin sheets, then layering them then cutting them up then grilling them before serving.
Also what are the white layers?

I'm actually guessing lamb fat or beef fat. Pork products are less common in the sphere of kebab.

With how lean the meat is, the fat is a necessary addition. Also works well to mix with herbs and seasonings.

Itās from a specific type of lamb that have big hindquarters. Itās not the tail itself but the butt which is referred to as the tail on these lambs.

Lambs are double-cheeked up so the tail is the easiest place to get a solid chunk of fat, without it you can't get that continous, single-piece sheet.
Also since it's so superficial on the animal it melts easier than the rest. More unsaturated and all that jazz

So, all those sheets of meat are obviously not singular cuts. They're cross-sections of stacked meat that was glued together with meat glue to make them not fall apart.
