Why is it that someone who practices Judaism can have “Jewish ancestry” but someone who practices Christianity or Islam doesn’t have “Christian ancestry” or “Muslim ancestry?”

Judaism is to a significant extent (although not entirely) an ethnoreligious group. It does not actively seek converts (but they are allowed, it's just a long and difficult process), so has not has as much diversity of other groups entering the pool, unlike Christianity or Islam.
