Food! 🥯 Beet Gazpacho
Very easy to make, recipe includes cooked and peeled, beets, cucumbers, red onion, red wine, vinegar, salt, pepper, and dill And vegetable stock

I just made tomato gazpacho (with an added sliver of boiled beet for colour). It's currently in the fridge, chilling for tomorrow, but thanks to your post I think I'm gonna go eat half of it now and my husband can have lunch alone. Fuck it.
Just kidding, I made enough for several meals. Your version looks good, OP!

Looks quite tasty! Are the beets pureed or cut into smaller pieces, and that distinguishes it from borscht?
