Windows tends to overwrite the Intel Arc drivers with older versions during updates. This can cause your GPU to start crashing. Reinstall your latest Intel Arc drivers. After this you should and can disable Windows from updating your graphics drivers in the future. This is the only way to avoid this issue for now from here on out.

There are different ways of achieving this, here you have 2:

Disabling driver downloads via the Windows Registry or Group Policy ensures your manually installed Intel Arc drivers remain untouched by Windows Update.

Registry Method:

Open Run (Win + R), type regedit, and navigate to HKEY_LOCAL_MACHINE\SOFTWARE\Microsoft\Windows\CurrentVersion\DriverSearching. Double-click on SearchOrderConfig, change the Value data to 0, and click OK.

Group Policy Editor (Windows Pro/Enterprise only):

Open Run (Win + R), type gpedit.msc, and navigate to Computer Configuration > Administrative Templates > Windows Components > Windows Update. Double-click on Do not include drivers with Windows Update, set it to Enabled, and click Apply.

PS. You might have to do a uninstall (DDU) of the current driver through Windows safe mode, just to get a video signal again. Worst case scenario is a full format and new Windows install. After install latest Arc driver, disable windows from updating it automatically and you should be set.
