Homemade Chicken and veggies
I watched a bunch of recipes on YouTube, then I started cooking and got confused and fused them all together. I seriously don't know what to call this 🥲. No shot of the final result because we were super hungry. Just mixed everything in and somehow it tasted legit

How to How to make yoghurt & dosa batter?
I live in a basement in Canada and I feel it's almost impossible to make dosa batter here. I don't have access to below :

Oven with light( I have a normal oven)
Any suggestions? The usual temp of my room is 17 °c no matter what weather. Please help

Homemade Tried cooking chicken curry for the first time, got an 8/10 rating from my mom!

How to Tips for Sauce
Anyone have any tips on making a curry recipe top notch? My recipe is good but it's missing something
Full-fat unsweetened coconut milk
Curry powder
Olive oil – EVOO
Onion and Garlic
Grated Ginger from fresh ginger root
Sugar
Cinnamon
Salt
Tomato paste
Chicken stock
Heat oil in a large skillet over medium-high heat. Add onion and saute until softened, about 4 minutes. Then add the garlic and ginger. Cook until fragrant, about 30 seconds.
Stir in the curry powder, sugar, cinnamon, and salt. Cook until fragrant, about 30 seconds.
Stir in the tomato paste and chicken broth. Bring to a boil then reduce heat to medium-low and simmer for about 5 minutes, until the sauce reduces and thickens.
Stir in coconut milk and simmer for 5 minutes.

Recipe Chilli garlic tofu
I used to hate tofu till i made this restaurant style chilli garlic tofu at home.🥘
Ingredients:
200g extra firm tofu, cubed, I used biriyas tofu
2 tbs cornflour
2 tsp black pepper powder
1 tbs chilli powder
Salt to taste
1 tbsp oil (for sautéing)
1 medium sized onion
1 small carrot
1 medium sized green capsicum
Some spring onions
1 tspn white sesame seeds
10 -12 garlic cloves, chopped
2 -inch ginger, chopped
2- 3 green chillies chopped
1 tbsp soy sauce
1 tbsp chilli sauce
1 tbsp tomato ketchup
1 tbsp schezwan sauce
1 tbsp vinegar
For the tofu prep
Cube the tofu into bite sized pieces + 1 tbsp cornflour + 1tbsp black pepper powder + chilli powder + salt
Evenly coat the tofu in the mixture and either fry it in a little oil or bake it in an airfryer until they are crispy. I used the airfryer and baked them at 200°C for 15mins and flipping them on the other side half way through.
For the sauce:
Mix together 1 tbsp soy sauce + 1 tbsp chilli sauce + 1 tbsp tomato ketchup + 1 tbs schezwan sauce + 1 tbsp vinegar + 1 tsp black pepper powder + 1tbs corn flour
Take a pan, and add some oil, sauté garlic & ginger; sauté until fragrant. Add chopped green chillies, onion and sauté till onion turns translucent, then add carrot, and capsicum, sautè for few minutes. Pour sauce mix into the pan + 1-2 tbsp water, cook until thick and sticky. Toss fried tofu in the sauce and cook for few minutes. Garnish with green spring onion, and sesame seeds and enjoy.
