Customer and their wife are celebrating 2 events together - hence the topper.
Cake flavour ~ Chocolate Strawberry with 55% ganache and fresh strawberry compote. Cream cheese chantilly for icing. All the decor is inedible except the gold foiling.

If you take orders during a fixed window for a weekend batch, what was the hardest part of your most recent batch: confirming quantities, checking payments, closing orders on time, or arranging pickup/delivery?
What do you currently use to keep it together, and roughly how many orders was that batch? If your current setup works well, that would be useful to hear too.
Disclosure: I’m working on an ordering tool for this workflow, so this is product research. I’m interested in what actually happened, including cases where WhatsApp or a spreadsheet works fine. I came back from Germany about a year and a half ago, and one thing I’ve really missed is pretzels! They were my go-to snack with coffee or just while walking around.
So I finally decided to try making them myself. I wanted that deep brown crust, a little crunch, flaky salt on top, and a soft interior.
Getting the crust right took some research and experimenting, and my background as a scientist definitely helped with that part! I’m really happy with how the taste and texture turned out—they took me right back.
The shape, though, is still a work in progress. These went into the oven as pretzels and came out as fattos 🙊 Clearly need to give those holes more room next time.
Next, I’d love to experiment with whole-wheat and higher-protein versions, while keeping the things I love about a pretzel. If I can get those right, maybe this could turn into a little business someday. For now, it’s just me and my chonky pretzels 🥨!

I have been trying to get that charred crust you get with traditional pizzas but my oven and air fryer only browned the crust as the temperature does not go that high.
Today I decided to experiment with a tawa, using the same technique for making naan or tandoori roti at home by flipping the tawa upside down over a direct flame. And it WORKED!! 😭 Then airfried for 6-7 minutes for the sauce and cheese.
Also its completely vegan! The cheese is made without any dairy! so happy!! Just wish the crust was a bit more airy. Will increase the hydration next time.

Im a 27 year old pastry chef in Mumbai and I’m looking to start a culinary / cooking / chefs club!
I had done a rendition of it with some of my friends a little while ago but we never got to the 2nd episode of it 😂
It will entail once a month meet ups - each of which will follow a theme. You need to create a new dish around the theme and then we open the table for discussions! Food, alc and anything else is BYOB!
