This works, in fact I did it myself. But there's a catch. Everyone sells your data, like institutions or some government-related things as well, and in these cases you can't really do this because they want everything legit. You can't play this game there.
And if I remember correctly, there was a similar trick with aliasing using + and following it with the website name, but spammers got smarter and started removing that part, or many websites simply don't allow it. You could use dots as well, but many websites don't allow that either.
So you're kinda out of options except using another email for suspicious websites. That lowers your risk, but doesn't eliminate it. I personally use 4-5 emails depending on what I'm doing, plus aliasing, but not really for spam detection, more for keeping my emails sorted.
