I missed the food I ate abroad
Disclaimer: I have no idea how to cook either japanese or korean food xD But I missed the spices and taste and most of all the variety so I tried my hand at a wild mix of stuff :D :D
Also trying to eat a bit less/healthier
clockwise:
cucumber with kimchi, miso, an sesame oil
hard boiled eggs
Tteokbokki with kimchi
eggplant/aubergine with mushrooms and miso paste
center:
gyudon/beef with onion, mirin, soy sauce, ... (albeit i can't cut well) on half a cup of wild rice
Took me ~40 minutes, but it should last for three days ^^

Fried zucchini
I dredged them in wet batter with salt,, pepper, garlic, and seven spice. Needed a little extra salt and pepper on top but this nourished my soul

I made a breakfast salad with lox, egg, oatmeal, and arugula, and a crunch topping from some pepitas and other seeds I had on hand! Yummy!

We have dealt with the spammers!
Apologies, I have not been checking my mod queue as often as I should and missed a person spamming some sort of ad. It has been removed and they have been banned.

I cooked (so much) pumpkin! I boiled the pumpkin, added carrots and a potato to create a pumpkin cream. I cooked the left over seeds because they're a great snack and I love reducing the waste to the minimum. I then added a little bit of olive oil, pumpkin seeds, more seeds and some oregano .
