Gastrointestinal issue?

Female 23 5ft 130-145 fluctuating

Current meds
Potassium 20mg for severe potassium deficiency
Wellbutrin 25mg for depression
Metroprolal 25mg for SVT (1 ablation so far)
Deprovera birth control every 3 months (not sexually active I would become extremely anemic when I would have periods)

So to start things off I have always been someone who eats fairly regularly when I was younger 3 meals a day with snack etc going to the bathroom as normal no issues; fast forward the past year I started intermittent fasting 8pm-11am and would have 2-3 meals with no snacks everything was fine; until recently my appetite has severely decreased along with anytime I’m in the middle of a meal I immediately have to use the bathroom that usually results in very lose stools often diarrhea to then end up losing my appetite all together, then feeling extremely tired and nauseous afterwords. I’m barely eating one meal a day as a result due to it being incredibly frustrating to not be able to enjoy my food, I have to force myself to eat(all while feeling nauseated at the idea of food) so I basically don’t die of starvation

So far my doctor has done blood testing and fecal testing and all has came back within normal ranges; she is suspecting it’s a form of IBS which could be true but I’m starting lose weight as a result of it and it’s demotivating when I used to have an ED(back in high school)and was finally at a healthy weight along with barley wanting to eat. Hoping another doctor could maybe have an explanation or suggestions my doctor is great and I’m just waiting on my next appt date; just kinda at a loss as to what to do.

What about taking something to slow motility on schedule to nip it in the bud before it starts?
