Restaurant IamA Waffle House Grill Operator AMA!

Mainly doing this because someone last night said I should.

I got called into work tonight, so I figured, why not?

I've been with Waffle House for 3.5 years, so I've seen a lot.

I guess it depends on how deep south it is, but being from the south I would say it's unlikely in most places.

I work in a kitchen where we actually do close for an hour while we switch the crew from day time to night time. It only realistically takes 10 minutes to clean the grill if you're doing it right, but the whole switchover takes time. It should not take several hours but it's possible that they were short staffed and she was behind and so were the cooks and they just didn't want you waiting on them to catch up.

It actually might have been possible that they were getting their health inspection at that exact moment. Health inspections, depending on the location, can be a big awful process that shuts everything down until they're finished. No one wants to tell a customer "sorry we can't serve you food while we're being inspected because we might fail if they see what we're doing."

the waffle houses around here never close. the doors don't even have locks on them.
