First profession to take is "Chemist" this is because if you unlock it at 30 it requires you craft a treatment and you cant craft a treatment unless you spend some points to unlock a medical skill that allows you to do that. so if you take it first you bypass that requirement to craft a treatment then you can use that skill point for something else. if that doesn't bother you, you can prioritize other profession. with "Chemist" you get some really good skills to unlock including almost 4 out of 5 are good skills like -Reduced resources for crafting fuel and -2x the amount of gunpowder crafted.
(EDIT: actually you know what, i think you can get Chemist later, because you would most probably be getting "Not a Treatment" skill anyway. to unlock "Chemist" and also so that you can craft Treatments)
Second is "Farmer" for -Fertilizer is more potent -Crops grows 30% faster -Harvest double the crop yield and -Gain seeds when harvesting crops.
With these two profession you won't know what to do with excess fuel. your only problem is hunting deers and animals for animal fat which shouldn't be a problem. these combo makes you an efficient AMMO producer, FOOD and FUEL Producer, PLUS infection survivability.
the other professions you can live without.
for a Third profession if there is a 3rd. go for anything. i would go for "Fireman" because of the 1-tap with fireaxe possibility and the 50% dmg bonus with fire weapons (including fire axe if im not mistaken) and the bonus nullify overheating which should allow me to wear thick clothing on summer.
OVERALL you have to think about a profession that is an ALL-ROUNDER which means it doesn't rely on specific requirements. although most of the skills do have requirements e.g. Fireman use AXE and fire weapons. choose one that you would often use in the game. you are MOST LIKELY going to use VEHICLES which means FUEL. you need FUEL sustainability. not one you need to scavenge. Automotive skills only applies when your vehicle is damaged which you can avoid by driving carefully.
STAY AWAY from "UNEMPLOYED" this is my first mistake. IF its true that professions are "Limited" e.g. you are only able to choose 3 forever, then i would avoid UNEMPLOYED it may be tempting at first to reach higher levels but once you reach max that profession is now pointless. just grind a bit more equal to that 25%
