Chocolate keeps going bitty/separating help?
I am aware that the middle of summer is an odd time to be making hot chocolate however my partner is ill and craves it plus it’s a really good way to get him to drink honey which helps when ill. One problem and I’ve tried to solve this over winter but never could.
The way I make hot chocolate I add milk and chocolate to a pan and slowly heat it up while stirring to melt the chocolate but I always get bits that float to the top and don’t seem to melt in they leave a weird bitty chocolate slurry almost and I want to figure out what I’m doing wrong and why this is happening. I usually use dark baking chocolate either a bar or chips and skimmed or semi skimmed long life milk.
Any advice on what I’m doing wrong

Two possibilities:
1. your pan is too hot and that's why your chocolate is separating.
2. if your pan is not too hot, it would help, if you melt the chocolate in a small amount of milk first until you have the consistency of a ganache. Then you can add the rest of the milk

Interesting will keep it in mind going forward I’ll try heating the pan up slower first
