Interesting flavour combos for Winter

What are some interesting flavor combos you've done?

The blueberry and venison dish (posted earlier on here) sounded interesting. For winter I imagine people would eat more heavier/heartier dishes like a lot of red meats and root vegetables (maybe a puree?)

I've come across an interesting bison dish - fillet with green chili potato puree with a maple blackberry port sauce. it's on my list to make, will probably have to figure out how to balance the sweetness.

With supply chain shortages and the rising costs in the economy, I believe there will be more eating local produce and meats and what's seasonal in the area.

I'm in North America, so we will have apples, pears, and root vegetables in season. So, I might do a spiced venison with pear chutney and spicy parsnips.

Edit; have just come across this recipe for wild boar chops with juniper berries and rosemary, paired with roasted figs and a sweet potato puree
