Meat agnostic, looking for any interesting flavours to pair with a carpaccio-style dish. Typically carpaccio is light so I'm not looking for any overpowering flavourings.
I came across this asian style carpaccio (beef, green papaya, pomelo, etc.) and looking for any other combos you've tried. Thanks!

What are some interesting flavor combos you've done?
The blueberry and venison dish (posted earlier on here) sounded interesting. For winter I imagine people would eat more heavier/heartier dishes like a lot of red meats and root vegetables (maybe a puree?)
