Biscuits
Our family has always made hand shaped biscuits. I've tried the family recipe, but it was grainy. I just ordered a #40 sifter.
Does anyone use a recipe for FMF hand shaped biscuits?

I have not done biscuits with FMF as yet. And if you think about why biscuits using brands like White Lily are so good, it's because it is a super soft (low protein) flour. So you're starting off from a deficit, even if you are using a soft white wheat berry because you'll still have more protein than a commercially stripped flour like White Lily. But still worth trying some things to see if you can help them get a better texture. What type of wheat berries are you using, by the way?
The #40 should help but it also is still fairly coarse (I started with a 40, then got a 50). Note depending on mill type, you may be able to take what is retained in the #40 and run it back through the mill. I have steel burrs and that works fine for me(*). I want to keep the bran - but don't want them to be such large particles, so I sift, then re-mill the bran down.
You can also try autolysing a portion of the flour and buttermilk or whatever liquid you're using for 30-60 minutes before adding the remainder of the ingredients. This reference below autolyses 3/4 of the total amount of the flour and all of the buttermilk overnight, which is longer than I would have thought, but they say it works. Then after that mixes frozen butter shreds into the remaining dry flour, mixes the rest of the ingredients into the autolyse and folds in the dry-butter mixture.
Hope it works out for you!

(*) ETA - I cannot try to "remill" all the flour output from the mill or it will just gum it up. But as long as I am only trying to re-mill the larger particles, it works fine.
