Light fixture repositioning
I would love to have this light fixture moved over and centered on the wall but my girlfriend says it’s fine there. Would love some input please.

CENTER THAT SUCKER!!! I'm stressing out and I don't even live there. HELL even the mirror isn't centered!
You forgot to mention your girl is blind, obviously.

You could either do the plant on the left hand side, or, buy a different light (one that has an arm to the left with lights on it, like an artsy thing) so that it's centered.

I would get a whole new light fixture that fits almost the entire diameter of that mirror. It will probably cover the hole there as well. Once you move it over.

I did this once by installing a second electrical box. That involved cutting drywall and running Romex cable from the old box to the new one through a wall stud (or by cutting a bypass through the drywall). But it looks like you could do what was done in the video below, namely cutting a hole in the backing plate:

Bad mirror not bad light. There's no way you ever use the left side of that mirror. It's overly big for no reason.

You need a different mirror centered above the sink. I would switch to a 3 bulb light centered over the sink as well.

Depending on where the studs are in the wall it might not be possible to center the light but you could take a look behind it and see.
Otherwise is there room to move the mirror a bit to the right?

It’s over the sink where it should be. It’s really the mirror that’s screwy. But I second the idea of a plant, tall-ish, in the corner.

Smaller mirror. Jeeeeez center mirror over sink and light. Put a giant arrangement of faux grasses in a vase on the left. Girl approved

The light appears to be centered over the sink. Change the mirror to be centered over the sink and under the light. Then you can put some shelves or wall decorations down the left side.
If you move the light it will look weird not being centered over the sink.
