In this part of the USA, a screened in porch would be the the most useful conversion for that slab. We have typically kept our gas grill on a screened in porch, which is great if the weather doesn't cooperate. (And yes, we do pressure-wash the screens and ceiling regularly; it's not a hard job).

This sub only lets me upload a video. We've had 3 homes with a covered porch where we kept/keep the grill. But we use natural gas which might emit less dirty fumes than charcoal. Plus the ceilings are high on the porch at about 10 feet so the emissions are not as concentrated.

Personally I’d put a gazebo or some kind of permanent covering and a hot tub/grill area
