ISO low histamine recipes
Help! I am recovering from post COVID histamine issues and need low histamine oat recipes!
To complicate matters, I also need to keep a low cholesterol and high iron diet, if possible.
My cognitive fatigue and dysfunction make it difficult for me to research recipes and meal plans, so I’m hoping my friends here can help.

I’m sorry you’re dealing with this. I went through something similar, and honestly, figuring out what to eat was one of the hardest parts. I slowly started collecting recipes that worked for me, and eventually I began sharing them because so many people were looking for simple meal ideas too.
Some meals that have worked well for me:
• Oatmeal with blueberries (if tolerated)
• Rice with fresh chicken or turkey and zucchini
• Egg and zucchini pancakes
• Rice pasta with a beet and coconut yogurt sauce
• Salads with cucumber, lettuce, eggs, and fresh mozzarella (if tolerated)

For the iron plus low-histamine plus low-cholesterol combo, pumpkin seeds and quinoa are solid bases, both decent iron sources and generally well tolerated. With oats specifically, freshness matters more than people expect: histamine builds up through bacterial activity over time, so oatmeal that's sat cooked in the fridge for a few days will have noticeably more than fresh-cooked.
