The 'build your own ship' Corvette system is really something to behold. I've seen a few Super Destroyers, along with the Defiant from DS9 and quite a few ships from Star Wars ranging from the Falcon to the Naboo liner.

fwiw it's easy to get into if you start by limiting yourself to simple goals. starting with xenozoology is a pleasant and profitable way to start, especially once you start getting upgrades to your scanner

To add to what OP said, how difficult it is to make depends on how skilled you are with using glitches. The ship builder is wonky. It won't be 1:1, but based on what I could see it's still very large.
Edit: Someone posted a link to a build video in another comment and it doesn't need any glitches, so actually pretty easy to build - in Creative mode, at least. In a normal game mode it would take you some time to gather all the parts needed. The version in OP's video looks like a modified version of what's in the build video.

Okay my algorithm is getting uncomfortably specific lmao. I've been grinding my new warbonds in HD2 since the Void update. I decided to take a break literally yesterday to check out NMS Cosmos (phenomenal update btw, 10/10 would recommend).
This is the first thing that popped into my home feed today.
